Vinification:Cold pre-fermentation is carried out for 3 days to extract the maximum fruit aromas. Fermentation is controlled by manual barrel pressing and punching down to submerge the cap and extract polyphenols for a good ageing. In the pressing phase, a manual vertical press is used. Malolactic fermentation in barrels. Aged in new barrels of different oak origins such as French, Hungarian and American for a period of 18 to 24 months until it is refined in the bottle.
Tasting:Very dark cherry colour. Good fruit intensity with hints of ripe fruit with a mineral background. Toasted tones from the barrel that provide chocolate, toffee and spices. Very structured. Very intense and long entry and finish. Powerful flavours.
