Vinification :The grapes are harvested by hand in 15 kg boxes so that the fruit is not squeezed until it reaches the winery. This is necessary in order to preserve the aroma of the fruit, as well as the complexity and structure of the future wine. At the winery, grapes are sorted on a sorting table, peeled from stalks and seeds, and then crushed and fermented in steel vats in the form of truncated cones at a controlled temperature of 28 ºC. The small volume of the tanks, from 8000 to 15000 liters, allows complete control of the process. Tasting :The wine is very dark, almost black in color with ruby highlights. The rich aroma of wine envelops with tones of red fruits, strawberries, raspberries and licorice. The taste of the wine is pleasant, fresh, drinkable, with a good balance of acidity and tannins, a juicy, fruity aftertaste. best served with pasta, pizza, cold meats, stews or aged cheeses.
