Vinification :The hand-picked grapes are carefully placed in mesh boxes and dried in the open air under the influence of strong mountain winds for 14 days. The dried berries, having lost about 15% of their initial weight, are pressed and left to macerate for several hours. Fermentation takes place in the patented Fermentino Ca'Botta tank to obtain a more refined and elegant wine. After fermentation, the wine is aged o the lees for a long time, about 18 months. After bottling, th wine matures in bottles for at least 6 months at a controlled temperature.
Tasting :White dry wine of yellow, slightly green straw-like color. The olfactory note reveals the elegant notes of Mediterranean fruits and white flowers. The taste has notes of apricots and pears.
